Ingredients
  

  • For the Bowl
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 4 cups chopped kale or lettuce
  • 1/2 cup diced white onion
  • 1 pound baby potatoes diced
  • 1 tablespoon olive oil
  • For the Burger Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle relish
  • 1 teaspoon white vinegar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25 to 30 minutes, stirring halfway through, until golden brown and crispy.
  3. While the potatoes cook, whisk together the mayonnaise, ketchup, mustard, relish, vinegar, paprika, and garlic powder in a small bowl. Refrigerate until ready to serve.
  4. Heat a large skillet over medium-high heat.
  5. Add the ground beef and break it apart while cooking. Season with salt, pepper, garlic powder, and onion powder.
  6. Cook for 7 to 8 minutes until browned and fully cooked.
  7. Reduce the heat to low and sprinkle shredded cheddar cheese over the beef. Cover briefly until the cheese melts.
  8. Prepare serving bowls by adding chopped kale or lettuce as the base.
  9. Divide the roasted potatoes between the bowls.
  10. Add the cheesy ground beef and sprinkle with diced onions.
  11. Drizzle generously with burger sauce and serve immediately.

Notes

Use an 80/20 ground beef blend for the juiciest results.
Roasting the potatoes instead of frying keeps the dish simple while still delivering great texture.
The burger sauce can be prepared a day ahead to save time.
Freshly shredded cheese melts much better than pre-shredded cheese.
