Ingredients

  • pounds boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 cups broccoli florets
  • 2 carrots thinly sliced
  • 1 red bell pepper sliced
  • 1 small onion sliced
  • 8 ounces mushrooms sliced
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 green onions sliced
  • 1 teaspoon sesame seeds optional
  • Honey Garlic Sauce
  • cup honey
  • ¼ cup low-sodium soy sauce
  • 3 cloves garlic minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Method
 

  1. Whisk together the honey, soy sauce, garlic, rice vinegar, sesame oil, cornstarch, and water in a small bowl. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces and cook for 6 to 8 minutes until browned and fully cooked. Transfer the chicken to a plate.
  4. Add the broccoli, carrots, onion, bell pepper, and mushrooms to the skillet.
  5. Stir-fry the vegetables for 5 to 6 minutes until they are crisp-tender.
  6. Stir in the garlic and fresh ginger and cook for about 30 seconds until fragrant.
  7. Return the cooked chicken to the skillet.
  8. Pour the honey garlic sauce over the chicken and vegetables.
  9. Cook for 2 to 3 minutes, stirring frequently, until the sauce thickens and coats everything evenly.
  10. Sprinkle with sliced green onions and sesame seeds before serving.
