Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup snap peas
  • 2 carrots thinly sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • ¼ cup chicken broth
  • 2 green onions sliced
  • 1 teaspoon sesame seeds optional

Method
 

  1. In a small bowl, whisk together the soy sauce, oyster sauce, honey, sesame oil, cornstarch, and chicken broth until smooth.
  2. Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  4. Cook the shrimp for 1 to 2 minutes per side until pink. Remove from the skillet and set aside.
  5. Add the remaining tablespoon of oil.
  6. Stir-fry the broccoli, carrots, bell peppers, and snap peas for about 5 minutes until crisp-tender.
  7. Add the garlic and ginger and cook for 30 seconds until fragrant.
  8. Return the shrimp to the skillet.
  9. Pour in the prepared sauce and toss everything together until the sauce thickens and evenly coats the shrimp and vegetables.
  10. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Pat the shrimp dry before cooking for a better sear.
  • Do not overcook the shrimp or they may become rubbery.
  • Stir the sauce before adding it since the cornstarch settles.
  • Cook the vegetables over high heat to keep them crisp.
  • Fresh garlic and ginger provide the best flavor.
