In a small bowl, whisk together the soy sauce, oyster sauce, honey, sesame oil, cornstarch, and chicken broth until smooth.
Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Cook the shrimp for 1 to 2 minutes per side until pink. Remove from the skillet and set aside.
Add the remaining tablespoon of oil.
Stir-fry the broccoli, carrots, bell peppers, and snap peas for about 5 minutes until crisp-tender.
Add the garlic and ginger and cook for 30 seconds until fragrant.
Return the shrimp to the skillet.
Pour in the prepared sauce and toss everything together until the sauce thickens and evenly coats the shrimp and vegetables.
Garnish with sliced green onions and sesame seeds before serving.
