Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook the lasagna noodles according to the package directions until al dente. Drain and lay them flat on parchment paper.
In a large bowl, combine the ricotta, 1 cup mozzarella, Parmesan, egg, spinach, garlic, Italian seasoning, salt, and pepper until well mixed.
Spread a thin layer of marinara sauce over the bottom of the baking dish.
Spread about 3 tablespoons of the ricotta mixture evenly over each cooked lasagna noodle.
Roll each noodle tightly and place it seam-side down in the prepared baking dish.
Pour the remaining marinara sauce evenly over the roll ups.
Sprinkle the remaining mozzarella cheese over the top.
Cover with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10 to 15 minutes, or until the cheese is melted and lightly golden.
Let the lasagna roll ups rest for 10 minutes before serving.
Garnish with chopped parsley.
