Ingredients
  

  • 2 pounds boneless skinless chicken thighs or breasts
  • pounds baby potatoes
  • 4 large carrots cut into chunks
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cups low-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Place the baby potatoes and carrots into the bottom of the crockpot.
  2. Season the chicken with salt, pepper, paprika, garlic powder, Italian seasoning, thyme, and rosemary.
  3. Arrange the chicken over the vegetables.
  4. Add the minced garlic and butter over the chicken.
  5. Drizzle with olive oil.
  6. Pour the chicken broth around the chicken and vegetables.
  7. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until the chicken is tender and the vegetables are cooked through.
  8. Spoon the cooking juices over the chicken before serving.
  9. Sprinkle with fresh parsley and serve warm.

  • Baby Yukon Gold potatoes hold their shape well.
  • Chicken thighs stay extra tender during slow cooking.
  • Fresh garlic gives the best flavor.
  • Don't overcook the vegetables if using HIGH heat.
