Crockpot Cheeseburger Soup

Ingredients
  

  • 1 pound lean ground beef
  • 6 slices bacon cooked and crumbled
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 medium russet potatoes peeled and diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces cream cheese softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • Chopped green onions for garnish

Method
 

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain the excess grease.
  2. Transfer the cooked beef to the crockpot.
  3. Add the onion, garlic, potatoes, carrots, celery, chicken broth, Worcestershire sauce, parsley, paprika, salt, and black pepper.
  4. Cover and cook on Low for 6 to 7 hours or High for 3 to 4 hours, until the vegetables are tender.
  5. About 30 minutes before serving, stir in the softened cream cheese until melted.
  6. Add the shredded cheddar cheese and heavy cream, stirring until smooth and creamy.
  7. Mix in half of the cooked bacon.
  8. Cover and cook for another 20 to 30 minutes.
  9. Serve topped with the remaining bacon, chopped green onions, and extra cheddar cheese if desired.

Notes

  • Browning the beef first adds the best flavor.
  • Cut the potatoes into even-sized pieces for consistent cooking.
  • Soften the cream cheese before adding it.
  • Freshly shredded cheddar melts much better than pre-shredded cheese.
  • Stir gently after adding the cheese to keep the soup smooth.
