Blackstone Hot Honey BBQ Chicken Quesadillas

These Blackstone Hot Honey BBQ Chicken Quesadillas are crispy, cheesy, sweet, and spicy with juicy BBQ chicken and melted cheese.

Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 tablespoon olive oil
  • 1/2 cup BBQ sauce
  • 2 tablespoons hot honey
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 red onion thinly sliced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 large flour tortillas
  • Butter or oil for the griddle

Method
 

  1. Preheat the Blackstone griddle over medium heat and lightly grease the surface with butter or oil.
  2. In a bowl, combine the cooked chicken, BBQ sauce, hot honey, smoked paprika, garlic powder, salt, and pepper. Mix until the chicken is fully coated.
  3. Place tortillas on the warm griddle and sprinkle cheddar and mozzarella cheese over one half of each tortilla.
  4. Add the BBQ chicken mixture evenly over the cheese.
  5. Top with sliced red onions and a little more cheese.
  6. Fold the tortillas over to form quesadillas.
  7. Cook for a few minutes on each side until the tortillas are crispy and golden brown and the cheese is fully melted.
  8. Remove from the griddle and let them rest briefly before slicing.
  9. Cut into wedges and drizzle with extra hot honey or BBQ sauce if desired.

Notes

  • Use medium heat so the tortillas crisp without burning before the cheese melts.
  • Rotisserie chicken works great and saves time.
  • Do not overload the quesadillas or they may be difficult to flip.
  • Butter adds extra flavor and helps create a golden crispy crust.
  • Let the quesadillas rest briefly before slicing to keep the filling inside.
  • Use freshly shredded cheese for the best melt and texture.
  • Adjust the amount of hot honey depending on your spice preference.
