Whisk together the soy sauce, honey, oyster sauce, rice vinegar, sesame oil, cornstarch, chicken broth, and red pepper flakes in a small bowl. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the pork strips and cook for 4 to 5 minutes until browned and just cooked through. Remove the pork and set aside.
Add the onion and bell pepper to the skillet and cook for 2 minutes.
Add the snap peas and stir-fry for another 3 to 4 minutes until crisp-tender.
Stir in the garlic and ginger and cook for 30 seconds until fragrant.
Return the cooked pork to the skillet.
Pour the prepared sauce over the pork and vegetables.
Cook for 2 to 3 minutes, stirring constantly, until the sauce thickens and coats everything evenly.
Sprinkle with sliced green onions and sesame seeds before serving.
