  • 1 large round slice watermelon about 1–2 inches thick

  • 1 cup vanilla Greek yogurt
  • 4 oz cream cheese softened
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • For the Fruit Toppings
  • 1 cup strawberries sliced
  • 2 kiwis sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 mandarin orange peeled and separated
  • Fresh mint leaves
  • Shredded coconut optional

Method
 

  1. Slice the watermelon into a large thick round and gently pat the surface dry with paper towels to remove excess moisture.
  2. Place the watermelon round onto a serving board or large plate.
  3. In a medium mixing bowl, beat together the Greek yogurt, softened cream cheese, honey, and vanilla extract until smooth and creamy.
  4. Spread the creamy mixture evenly over the top of the watermelon slice, leaving a small border around the edges.
  5. Arrange the sliced strawberries, kiwi, blueberries, raspberries, and mandarin orange pieces over the creamy topping.
  6. Garnish with fresh mint leaves and a sprinkle of shredded coconut if desired.
  7. Chill the watermelon fruit pizza in the refrigerator for about 15–20 minutes before serving for a cooler and firmer texture.
  8. Slice into wedges just like a pizza and serve immediately while fresh and chilled.
