Ingredients
  

  • For the Filling
  • 8 ounces cream cheese softened
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Vegetables
  • 1 cup shredded carrots
  • 1 cup finely diced cucumber
  • 1 red bell pepper finely diced
  • ¼ cup finely diced red onion
  • 1 cup chopped spinach
  • 2 tablespoons chopped fresh parsley
  • For Assembly
  • 4 large flour tortillas
  • Optional Dipping Sauce
  • Ranch dressing
  • Chipotle mayo
  • Greek yogurt dip

Method
 

  1. In a large bowl, beat together the cream cheese, sour cream, cheddar cheese, garlic powder, onion powder, dill, Italian seasoning, salt, and pepper until smooth.
  2. Fold in the shredded carrots, cucumber, red bell pepper, red onion, spinach, and parsley.
  3. Lay each tortilla flat on a clean surface.
  4. Spread one-quarter of the vegetable mixture evenly over each tortilla, leaving about ½ inch around the edges.
  5. Roll each tortilla tightly into a log.
  6. Wrap each roll tightly in plastic wrap.
  7. Refrigerate for at least 1 hour to firm up.
  8. Remove the plastic wrap and trim off the ends.
  9. Slice each roll into 1-inch pinwheels.
  10. Arrange on a serving platter and serve chilled with your favorite dipping sauce.
