Ingredients
  

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 cup shredded carrots
  • 1/4 cup green onions chopped
  • 1/4 cup chopped peanuts
  • 1/2 teaspoon red pepper flakes optional
  • 1 head butter lettuce or romaine leaves

Method
 

  1. Heat olive oil in a skillet over medium heat and cook the ground chicken, breaking it apart until fully cooked.
  2. Add garlic and ginger, then sauté until fragrant.
  3. In a small bowl, mix soy sauce, hoisin sauce, peanut butter, honey, and sesame oil until smooth.
  4. Pour the sauce into the skillet and stir well to coat the chicken evenly.
  5. Add shredded carrots and cook for a couple of minutes until slightly softened.
  6. Remove from heat and stir in green onions and chopped peanuts.
  7. Spoon the chicken mixture into lettuce leaves.
  8. Garnish with extra peanuts and herbs if desired, then serve immediately.

Notes

Cook the chicken thoroughly and break it into small pieces for the best texture.
Use fresh ginger and garlic for a stronger, more authentic flavor.
Do not overcook the carrots; keep a slight crunch for texture.
If the mixture becomes too thick, add a small splash of water to loosen it.
Choose sturdy lettuce leaves that can hold the filling without tearing.
Taste the sauce before adding and adjust sweetness or salt if needed.
Keep heat medium to avoid burning the sauce ingredients.
