Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach chopped
  • 4 ounces cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Using a sharp knife, cut a pocket into the side of each chicken breast.
  3. In a bowl, combine the spinach, cream cheese, mozzarella, garlic, and Parmesan cheese.
  4. Mix until well combined.
  5. Stuff the spinach mixture into each chicken breast pocket.
  6. Secure with toothpicks if needed.
  7. Rub the chicken breasts with olive oil.
  8. Season with paprika, Italian seasoning, salt, and pepper.
  9. Place the chicken in a lightly greased baking dish.
  10. Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  11. Let rest for 5 minutes before serving.
  12. Remove toothpicks and serve warm.

Notes

  • Do not overfill the chicken pockets.
  • Fresh spinach works best, but frozen spinach can be used if thoroughly drained.
  • Use a meat thermometer for accurate cooking.
  • Allow the chicken to rest before slicing.
  • Secure openings with toothpicks if necessary.
