Ingredients
  

  • For the Beef Filling
  • 1 pound ground beef 80/20 preferred
  • 1 small onion finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Quesadillas
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • For the Burger Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle relish
  • 1 teaspoon garlic powder
  • Optional Toppings
  • Diced pickles
  • Chopped lettuce
  • Diced tomatoes
  • Extra burger sauce

Method
 

  1. Heat a large skillet over medium-high heat.
  2. Add the ground beef and diced onion, breaking the meat apart as it cooks.
  3. Season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Cook until the beef is browned and the onions are tender.
  5. Drain excess grease if needed and set the mixture aside.
  6. In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish, and garlic powder to create the burger sauce.
  7. Lay a tortilla flat on a clean surface.
  8. Sprinkle cheddar and mozzarella cheese over half of the tortilla.
  9. Add a layer of the cooked beef mixture.
  10. Drizzle with a little burger sauce.
  11. Fold the tortilla in half.
  12. Melt butter in a large skillet over medium heat.
  13. Cook each quesadilla for 2 to 3 minutes per side until golden brown and crispy.
  14. Transfer to a cutting board and let rest briefly before slicing.
  15. Serve warm with extra burger sauce and pickles.

Notes

  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Avoid overfilling the tortillas to prevent the filling from spilling out.
  • Cook over medium heat so the tortillas become crisp without burning.
  • Allow the quesadillas to rest for a minute before slicing to keep the cheese from running out.
