Ingredients
  

  • pounds beef chuck roast cut into 1½-inch cubes
  • pounds baby Yukon Gold potatoes halved
  • 6 tablespoons unsalted butter sliced
  • 6 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Season the beef cubes with salt, pepper, paprika, onion powder, Italian seasoning, and thyme.
  2. Place the halved baby potatoes into the bottom of the slow cooker.
  3. Add the seasoned beef over the potatoes.
  4. Scatter the minced garlic over the beef.
  5. Top with the butter slices.
  6. Pour in the beef broth and Worcestershire sauce.
  7. Drizzle with the olive oil.
  8. Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the beef is fork-tender and the potatoes are cooked through.
  9. Gently stir everything together.
  10. Sprinkle with fresh parsley before serving.

Notes

  • Chuck roast is the best cut because it becomes incredibly tender.
  • Keep the beef cubes fairly large so they don't fall apart.
  • Yukon Gold potatoes hold their shape well during slow cooking.
  • Taste the broth before serving and adjust the seasoning if needed.
  • Spoon the buttery cooking juices over the beef when serving.
