Simple Teriyaki Chicken and Rice Bowl

This Simple Teriyaki Chicken and Rice Bowl is an easy meal with tender chicken, sweet savory sauce, and fresh vegetables over rice.

Ingredients
  

  • 2 cups cooked white rice
  • 2 chicken breasts cooked and sliced or shredded
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1/3 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 1/2 red bell pepper sliced
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions chopped

Method
 

  1. Heat olive oil in a skillet over medium heat and sauté the garlic until fragrant.
  2. In a small bowl, mix soy sauce, honey, brown sugar, rice vinegar, cornstarch, and water until smooth.
  3. Pour the sauce into the skillet and cook while stirring until it thickens into a glossy teriyaki sauce.
  4. Add the cooked chicken to the skillet and toss until fully coated in the sauce.
  5. Steam or sauté the broccoli and bell peppers until tender but still slightly crisp.
  6. Assemble the bowl by adding cooked rice as the base.
  7. Top with teriyaki chicken, vegetables, and shredded carrots.
  8. Sprinkle with sesame seeds and green onions before serving.

Notes

Use freshly cooked rice for the best texture, but leftover rice works well too.
Do not overcook the chicken to keep it tender and juicy.
Stir the sauce continuously while cooking to prevent lumps from the cornstarch.
Adjust sweetness or saltiness by adding more honey or soy sauce to taste.
Cook vegetables lightly to keep their crunch and color.
Use low-sodium soy sauce to control salt levels.
If the sauce becomes too thick, add a small amount of water to loosen it.
