Ingredients
  

  • For the Fajitas
  • 2 pounds boneless skinless chicken breasts, sliced into strips
  • 3 bell peppers red, yellow, and green, sliced
  • 1 large red onion sliced
  • 3 tablespoons olive oil
  • Juice of 1 lime
  • Seasoning
  • 2 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon cayenne pepper optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For Serving
  • Flour or corn tortillas
  • Fresh cilantro
  • Lime wedges
  • Sour cream
  • Guacamole
  • Salsa
  • Shredded cheese

Method
 

  1. Preheat the oven to 425°F (220°C) and lightly grease a large sheet pan.
  2. In a small bowl, mix together the chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, cayenne, salt, and black pepper.
  3. Place the sliced chicken, peppers, and onion into a large mixing bowl.
  4. Drizzle with olive oil and lime juice.
  5. Sprinkle the seasoning mixture over everything and toss until evenly coated.
  6. Spread the chicken and vegetables into a single layer on the prepared sheet pan.
  7. Roast for 20 to 25 minutes, stirring halfway through, until the chicken is fully cooked and the vegetables are tender with lightly charred edges.
  8. For extra browning, broil for 2 to 3 minutes at the end.
  9. Serve immediately in warm tortillas with your favorite toppings.

Notes

  • Slice the chicken and vegetables into similar-sized strips so they cook evenly.
  • Don't overcrowd the pan or the ingredients will steam instead of roast.
  • Use a large sheet pan for the best caramelization.
  • Chicken is done when it reaches an internal temperature of 165°F (74°C).
