Ingredients
  

  • For the Skewers
  • 2 pounds pork loin cut into 1½-inch cubes
  • 3 cups fresh pineapple chunks
  • 1 red bell pepper cut into chunks
  • 1 green bell pepper cut into chunks
  • 1 small red onion cut into chunks
  • For the Marinade
  • 1/2 cup barbecue sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons pineapple juice
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • For Basting
  • 1/2 cup barbecue sauce

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a large bowl, whisk together the barbecue sauce, soy sauce, pineapple juice, honey, garlic, smoked paprika, and black pepper.
  3. Add the pork cubes and toss until evenly coated. Cover and refrigerate for at least 1 hour or up to 8 hours.
  4. Preheat the grill to medium-high heat.
  5. Thread the pork, pineapple chunks, bell peppers, and onion pieces onto skewers, alternating ingredients for color and flavor.
  6. Lightly oil the grill grates.
  7. Place the skewers on the grill and cook for 12 to 15 minutes, turning every few minutes.
  8. Brush the skewers with additional barbecue sauce during the last 5 minutes of cooking.
  9. Continue grilling until the pork reaches an internal temperature of 145°F and the pineapple is lightly caramelized.
  10. Remove from the grill and let rest for a few minutes before serving.

  • Fresh pineapple works best because it caramelizes beautifully on the grill.
  • Avoid overcooking the pork to keep it juicy and tender.
  • Cut all ingredients into similar-sized pieces for even cooking.
