Pepperoni Pizza Quesadilla

This Pepperoni Pizza Quesadilla is a quick and cheesy recipe with mozzarella, pepperoni, and pizza sauce in a crispy tortilla.

Ingredients
  

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 20 –24 slices pepperoni
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil or butter
  • 2 tablespoons grated Parmesan cheese
  • Fresh parsley or basil optional, for garnish

Method
 

  1. Heat a skillet over medium heat and lightly brush with olive oil or butter.
  2. Place one tortilla in the skillet and spread a thin layer of pizza sauce over half of it.
  3. Sprinkle mozzarella cheese evenly over the sauce.
  4. Add pepperoni slices on top of the cheese.
  5. Sprinkle Italian seasoning and garlic powder for extra flavor.
  6. Add a little more cheese on top to help everything stick together.
  7. Fold the tortilla over to form a quesadilla.
  8. Cook until the bottom is golden brown and crispy, then flip carefully.
  9. Cook the other side until the cheese is fully melted and the tortilla is crisp.
  10. Remove from the skillet and repeat with remaining tortillas.
  11. Sprinkle with Parmesan cheese and fresh herbs before serving if desired.
  12. Slice into wedges and serve warm.

Notes

Use medium heat to avoid burning the tortilla before the cheese melts.
Do not overload with sauce to prevent the quesadilla from becoming soggy.
Use freshly shredded mozzarella for the best melt and stretch.
Cook one quesadilla at a time for even browning.
Let it rest briefly before slicing to keep the filling intact.
Use a non-stick pan for easier flipping.
Adjust pepperoni amount based on your preference.
