Ingredients
  

  • For the Pizza Muffins
  • 1 can refrigerated biscuit dough 8 biscuits
  • ½ cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 30 slices pepperoni
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 2 tablespoons melted butter
  • Optional Toppings
  • Fresh basil chopped
  • Crushed red pepper flakes
  • Extra Parmesan cheese
  • For Serving
  • Warm pizza sauce
  • Ranch dressing
  • Garlic butter

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Grease a standard 12-cup muffin pan.
  3. Flatten each biscuit into a circle about 4 inches wide.
  4. Press each dough round into a muffin cup, forming a small bowl.
  5. Spread about 1 tablespoon of pizza sauce into each cup.
  6. Add a layer of shredded mozzarella cheese.
  7. Place 2 to 3 pepperoni slices into each muffin.
  8. Sprinkle with a little Parmesan cheese, Italian seasoning, garlic powder, and oregano.
  9. Top with more mozzarella cheese and another pepperoni slice.
  10. Brush the exposed edges of the dough with melted butter.
  11. Bake for 15 to 18 minutes, or until the dough is golden brown and the cheese is bubbly.
  12. Allow the muffins to cool in the pan for 5 minutes before removing.
  13. Garnish with fresh basil and extra Parmesan if desired.
  14. Serve warm with pizza sauce or ranch for dipping.

Notes

  • Don't overfill the muffin cups or the cheese may overflow.
  • Refrigerated biscuit dough creates soft, fluffy pizza muffins.
  • Freshly grated mozzarella melts more smoothly.
  • Lightly grease the pan to prevent sticking.
  • Let the muffins cool slightly before removing from the pan.
