Pat the shrimp dry with paper towels.
In a bowl, toss the shrimp with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
Heat a large skillet over medium-high heat.
Cook the shrimp for 2 to 3 minutes per side until pink and cooked through. Remove to a plate.
Reduce the heat to medium.
Melt the butter in the same skillet.
Add the onion and cook for about 4 minutes until softened.
Stir in the garlic and cook for 30 seconds.
Add the corn and cook for 4 to 5 minutes, stirring occasionally.
Pour in the heavy cream and stir in the sour cream and mayonnaise until smooth.
Mix in the Monterey Jack cheese and cotija cheese.
Season with chili powder and smoked paprika.
Stir until the cheese has melted into a creamy sauce.
Return the shrimp to the skillet.
Add the lime juice and gently stir everything together.
Garnish with extra cotija cheese, chopped cilantro, and lime wedges before serving.
