- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat and cook the ground beef until browned, breaking it apart as it cooks.
- Add chopped onion and garlic, then sauté until softened and fragrant.
- Stir in taco seasoning, salsa, beans, corn, paprika, salt, and pepper, mixing well and letting it simmer for a few minutes.
- Spread a layer of tortilla pieces in the bottom of the baking dish.
- Add a layer of the meat mixture over the tortillas, then sprinkle with cheese.
- Repeat the layers (tortillas, meat, cheese) until all ingredients are used, finishing with cheese on top.
- Bake uncovered for 20–25 minutes until the cheese is melted, bubbly, and slightly golden.
- Remove from the oven and let it rest for a few minutes before serving.
- Top with sour cream and fresh cilantro before serving if desired.
