Pat the chicken dry with paper towels.
In a large bowl, combine the chicken with soy sauce, Worcestershire sauce, ketchup, browning sauce, brown sugar, paprika, garlic powder, onion powder, thyme, allspice, black pepper, and salt.
Mix well and marinate for at least 1 hour or overnight for the best flavor.
Heat the vegetable oil in a large Dutch oven over medium-high heat.
Brown the chicken on all sides, working in batches if needed. Remove and set aside.
In the same pot, cook the onion, carrots, and bell peppers for about 5 minutes until softened.
Add the garlic and green onions and cook for another 30 seconds.
Stir in the tomato paste and cook for 1 minute.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pot.
Add the potatoes, bay leaves, fresh thyme, and Scotch bonnet pepper if using.
Return the browned chicken to the pot.
Bring to a gentle simmer, cover, and cook for 45 to 55 minutes until the chicken is tender and the potatoes are cooked through.
Remove the bay leaves and Scotch bonnet before serving.
Garnish with chopped parsley and fresh thyme.
