Ingredients
  

  • For the Salmon
  • 4 salmon fillets cut into bite-sized cubes
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon olive oil
  • For the Bowls
  • 3 cups cooked jasmine rice
  • 1 cup shelled edamame
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1 cucumber thinly sliced
  • 2 green onions sliced
  • 1 tablespoon sesame seeds
  • Spicy Sauce
  • ΒΌ cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • 1 teaspoon lime juice

Method
 

  1. In a medium bowl, whisk together the honey, sriracha, soy sauce, sesame oil, garlic, and ginger.
  2. Add the salmon cubes and gently toss until evenly coated. Let marinate for 10 to 15 minutes.
  3. In a small bowl, stir together the mayonnaise, sriracha, honey, and lime juice until smooth. Set aside.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the salmon in a single layer and cook for 2 to 3 minutes without stirring.
  6. Turn the salmon pieces and continue cooking for another 3 to 4 minutes until caramelized and cooked through.
  7. Pour any remaining marinade into the skillet and cook for 1 minute until slightly thickened.
  8. Divide the cooked rice among four serving bowls.
  9. Arrange the edamame, shredded carrots, cabbage, and cucumber around the rice.
  10. Top each bowl with the glazed salmon.
  11. Drizzle with the spicy sauce.
  12. Sprinkle with sesame seeds and sliced green onions before serving.
