Whisk together the soy sauce, honey, brown sugar, rice vinegar, sesame oil, cornstarch, and water. Set aside.
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the ground turkey and cook for 6 to 8 minutes, breaking it apart until browned.
Stir in the onion, garlic, and ginger. Cook for 1 minute.
Add the carrots, broccoli, bell pepper, and snap peas.
Stir-fry for 5 to 6 minutes until the vegetables are crisp-tender.
Pour the teriyaki sauce over the turkey and vegetables.
Stir continuously for 2 to 3 minutes until the sauce thickens and coats everything evenly.
Remove from the heat and garnish with sliced green onions and sesame seeds.
Serve immediately over rice, noodles, or cauliflower rice.
