Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1/2 onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning or homemade
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup salsa
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella or Mexican blend cheese
  • 1/4 cup sour cream optional
  • 2 tablespoons fresh cilantro chopped

Method

  1. Heat olive oil in a large skillet over medium heat and cook the ground beef until browned, breaking it apart as it cooks.
  2. Add chopped onion and garlic, then sauté until softened and fragrant.
  3. Stir in taco seasoning, paprika, salt, and pepper, mixing well to coat the beef evenly.
  4. Add salsa, black beans, and corn, then stir and let everything simmer for a few minutes so the flavors combine.
  5. Sprinkle shredded cheddar and mozzarella evenly over the mixture.
  6. Cover the skillet and let it cook until the cheese is fully melted and bubbly.
  7. Remove from heat and top with sour cream and fresh cilantro if desired.
  8. Serve warm directly from the skillet.

Notes

Drain excess fat from the beef to avoid a greasy texture.
Use a thick salsa to prevent the skillet from becoming too watery.
Let the mixture simmer to deepen the flavor before adding cheese.
Keep heat low when melting cheese to prevent burning.
Stir occasionally to ensure even cooking and prevent sticking.
Adjust seasoning depending on the saltiness of your taco seasoning.
Use freshly shredded cheese for better melting and texture.
