Heat a large skillet over medium heat and cook the ground beef with the diced onion until the beef is browned. Drain any excess grease.
Stir in the garlic and cook for 30 seconds.
Add the taco seasoning, smoked paprika, cumin, and salsa. Stir until everything is well combined and cook for 2 to 3 minutes.
Remove the beef mixture from the heat.
Heat a clean skillet or griddle over medium heat.
Lightly butter one side of each tortilla.
Place one tortilla butter-side down in the skillet.
Sprinkle a layer of shredded cheese over half of the tortilla.
Spoon some of the beef mixture over the cheese.
Add another layer of cheese on top of the beef.
Fold the tortilla in half and cook for 2 to 3 minutes per side until golden brown and crispy and the cheese has melted.
Repeat with the remaining tortillas.
Let the quesadillas rest for 1 minute before slicing into wedges.
Garnish with chopped cilantro and serve with your favorite dipping sauces.
