Ingredients
  

  • For the Chicken
  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Caprese Topping
  • 2 cups cherry tomatoes halved
  • 8 ounces fresh mozzarella sliced or mozzarella pearls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • For Finishing
  • 3 tablespoons balsamic glaze
  • Additional basil leaves for garnish

Method
 

  1. In a small bowl, combine olive oil, garlic, Italian seasoning, paprika, salt, and black pepper.
  2. Brush the mixture evenly over both sides of the chicken breasts.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Place the chicken on the grill and cook for 6 to 7 minutes per side, depending on thickness.
  5. Continue grilling until the internal temperature reaches 165°F (74°C).
  6. Transfer the chicken to a serving platter and allow it to rest for 5 minutes.
  7. Arrange the cherry tomatoes, mozzarella, and fresh basil around and over the grilled chicken.
  8. Drizzle the salad with olive oil and season lightly with salt and pepper if desired.
  9. Finish with a generous drizzle of balsamic glaze over the entire dish.
  10. Serve immediately while the chicken is warm and juicy.

Notes

  • Allow the chicken to come to room temperature for about 20 minutes before grilling to encourage even cooking.
  • Fresh mozzarella provides the best texture and flavor for an authentic Caprese experience.
  • Do not add the balsamic glaze until serving time to keep the presentation fresh and vibrant.
  • If using larger tomatoes, slice them evenly for a more elegant appearance.
