Ingredients

  • For the Chicken
  • 2 pounds boneless or bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the BBQ Glaze
  • 1 cup barbecue sauce
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • Optional Garnish
  • Chopped fresh parsley

Method

  1. Pat the chicken thighs dry with paper towels and place them in a large bowl.
  2. Drizzle the chicken with olive oil and toss to coat evenly.
  3. In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Sprinkle the seasoning mixture over the chicken and rub it into all sides.
  5. Preheat the grill to medium-high heat and lightly oil the grates.
  6. In a separate bowl, mix together the barbecue sauce, honey, apple cider vinegar, and Worcestershire sauce.
  7. Place the chicken thighs on the grill and cook for about 5 to 7 minutes per side.
  8. Continue cooking until the chicken reaches an internal temperature of 165°F (74°C).
  9. During the last few minutes of grilling, brush the chicken generously with the BBQ glaze and flip frequently to create a caramelized coating.
  10. Remove the chicken from the grill and let it rest for 5 minutes before serving.
  11. Garnish with fresh parsley and serve warm.

Notes

  • Chicken thighs are more forgiving than chicken breasts and remain juicy even when grilled slightly longer.
  • Apply the barbecue sauce near the end of cooking to prevent burning from the sugars.
  • Bone-in thighs may require a few extra minutes of cooking time compared to boneless thighs.
  • Allowing the chicken to rest after grilling helps retain its juices.
