Ingredients
  

  • 1 pound 16 ounces potato gnocchi
  • 6 tablespoons unsalted butter
  • 1/2 cup walnuts roughly chopped
  • 8 fresh sage leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • Extra Parmesan for serving

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Cook the gnocchi according to package directions until they float to the surface.
  3. Reserve 1/4 cup of pasta water and drain the gnocchi.
  4. Meanwhile, melt the butter in a large skillet over medium heat.
  5. Cook the butter for 3 to 5 minutes, stirring often, until golden brown and fragrant.
  6. Add the walnuts and sage leaves.
  7. Cook for 1 to 2 minutes until the walnuts are toasted and the sage becomes crisp.
  8. Add the cooked gnocchi to the skillet.
  9. Gently toss to coat the gnocchi in the brown butter mixture.
  10. Add a splash of reserved pasta water if needed.
  11. Season with salt and pepper.
  12. Stir in the Parmesan cheese.
  13. Serve immediately with extra Parmesan on top.
