Ingredients
  

  • For the Chicken
  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • For the Vegetables
  • 2 medium zucchini sliced into half-moons
  • 2 cups corn kernels fresh, frozen, or canned
  • 4 cloves garlic minced
  • 3 tablespoons butter
  • ½ teaspoon crushed red pepper flakes optional
  • For the Sauce
  • 2 tablespoons chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • Garnish
  • Fresh parsley
  • Grated Parmesan optional

Method
 

  1. Season the chicken with paprika, Italian seasoning, garlic powder, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for 6 to 8 minutes until golden brown and cooked through. Transfer to a plate.
  4. In the same skillet, melt the butter.
  5. Add the garlic and cook for about 30 seconds until fragrant.
  6. Stir in the zucchini and cook for 3 to 4 minutes until slightly tender.
  7. Add the corn and cook for another 2 to 3 minutes.
  8. Pour in the chicken broth and lemon juice.
  9. Return the cooked chicken to the skillet and toss everything together.
  10. Cook for 2 more minutes so the flavors combine.
  11. Stir in the parsley and garnish with Parmesan if desired before serving.

Notes

  • Don't overcook the zucchini so it stays slightly crisp.
  • Fresh corn gives the sweetest flavor, but frozen corn works perfectly.
  • Brown the chicken well before removing it from the skillet for extra flavor.
  • Use freshly minced garlic for the best taste.
