Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • Butter and maple syrup for serving

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla until combined.
  3. Pour the wet ingredients into the dry ingredients.
  4. Stir gently until just combined. A few small lumps are perfectly fine.
  5. Let the batter rest for 5 to 10 minutes.
  6. Heat a lightly buttered nonstick skillet or griddle over medium heat.
  7. Pour about ¼ cup of batter onto the hot skillet for each pancake.
  8. Cook until bubbles appear on the surface and the edges begin to set, about 2 to 3 minutes.
  9. Flip and cook for another 1 to 2 minutes until golden brown.
  10. Repeat with the remaining batter.
  11. Serve warm with butter and maple syrup.

Notes

  • Don't overmix the batter or the pancakes may become tough.
  • Letting the batter rest creates fluffier pancakes.
  • Cook over medium heat to prevent burning.
  • Flip only once for the best texture.
  • Keep cooked pancakes warm in a low oven while finishing the batch.
