Easy Shrimp and Rice Skillet

This Easy Shrimp and Rice Skillet is a quick one pan dinner with juicy shrimp, seasoned rice, and simple ingredients.

Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic minced
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1/2 cup diced tomatoes
  • 1/2 onion chopped
  • 1/2 red bell pepper chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/2 teaspoon red pepper flakes optional
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Season the shrimp with salt, black pepper, and paprika, then set aside.
  2. Heat olive oil and butter in a large skillet over medium heat and sauté the onion and garlic until soft and fragrant.
  3. Add the chopped bell pepper and cook for a few minutes until slightly tender.
  4. Stir in the uncooked rice and toast it lightly for 1–2 minutes.
  5. Pour in the chicken broth and diced tomatoes, then mix well and bring to a gentle simmer.
  6. Cover the skillet and cook for about 15 minutes, or until the rice is tender and most of the liquid is absorbed.
  7. Add the shrimp on top of the rice and cover again, cooking for 4–5 minutes until the shrimp are pink and cooked through.
  8. Fluff the rice gently and mix everything together.
  9. Garnish with parsley and red pepper flakes if desired, then serve warm.

Notes

Use long-grain white rice for the best texture and even cooking.
Keep the skillet covered while the rice cooks to trap steam and ensure proper absorption.
Do not stir too often while cooking the rice to prevent it from becoming mushy.
Add shrimp at the end to avoid overcooking and keep them tender.
If the rice needs more liquid, add a small amount of broth and continue cooking.
Use fresh or properly thawed shrimp for the best flavor.
Adjust seasoning after cooking for the perfect balance.
