Ingredients
  

  • For the Chili
  • 2 tablespoons olive oil
  • pounds lean ground turkey
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 3 garlic cloves minced
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can diced tomatoes
  • 1 15-ounce can tomato sauce
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional
  • Salt and black pepper to taste
  • Optional Toppings
  • Shredded cheddar cheese
  • Sour cream
  • Chopped cilantro
  • Sliced green onions
  • Diced avocado
  • Crushed tortilla chips

Method
 

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.
  2. Add the ground turkey and cook for 6 to 8 minutes, breaking it into crumbles until browned.
  3. Stir in the onion and bell pepper and cook for 5 minutes until softened.
  4. Add the garlic and cook for 30 seconds until fragrant.
  5. Stir in the tomato paste and cook for 1 minute.
  6. Add the diced tomatoes, tomato sauce, chicken broth, kidney beans, black beans, chili powder, cumin, smoked paprika, oregano, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  7. Bring the chili to a gentle boil.
  8. Reduce the heat to low and simmer uncovered for 25 to 30 minutes, stirring occasionally, until thickened.
  9. Taste and adjust the seasoning if needed.
  10. Serve hot with your favorite toppings.

Notes

  • Lean ground turkey keeps the chili lighter while remaining filling.
  • Simmer longer for a thicker, richer chili.
  • Stir occasionally to prevent sticking.
  • Taste before adding extra salt since canned ingredients already contain sodium.
  • The chili tastes even better the next day.
