Ingredients
  

  • 4 large flour tortillas
  • 6 large eggs
  • ½ pound lean ground beef
  • ½ cup diced red bell pepper
  • ¼ cup diced onion
  • 1 cup shredded cheddar cheese
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh cilantro chopped (optional)

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it into crumbles as it cooks.
  3. Stir in the diced onion and bell pepper and cook for 3 to 4 minutes until softened.
  4. Season with the taco seasoning, garlic powder, salt, and pepper.
  5. In a bowl, whisk together the eggs, milk, and a pinch of salt.
  6. Melt the butter in a nonstick skillet over medium-low heat.
  7. Pour in the eggs and gently stir until soft, fluffy curds form.
  8. Warm the tortillas for about 20 seconds in the microwave or a dry skillet.
  9. Divide the scrambled eggs among the tortillas.
  10. Top with the seasoned beef mixture and shredded cheddar cheese.
  11. Fold in the sides, roll each tortilla tightly into a burrito, and serve immediately.

Notes

  • Cook the eggs over medium-low heat for the fluffiest texture.
  • Drain excess grease from the beef if necessary.
  • Warm tortillas before rolling to prevent cracking.
  • Freshly shredded cheese melts better than pre-shredded.
