Curried Red Lentil Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 cup red lentils rinsed
  • 5 cups vegetable broth
  • 1 can 14 ounces diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1/2 lemon
  • Fresh cilantro for garnish

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and carrots and cook for 5 minutes until softened.
  3. Stir in the garlic and ginger and cook for 30 seconds.
  4. Add the curry powder, cumin, and turmeric.
  5. Cook for 1 minute until fragrant.
  6. Stir in the red lentils, vegetable broth, and diced tomatoes.
  7. Bring to a boil.
  8. Reduce the heat and simmer for 20 to 25 minutes, stirring occasionally.
  9. Cook until the lentils are very soft.
  10. Use an immersion blender to blend part of the soup if desired.
  11. Stir in the salt, pepper, and lemon juice.
  12. Serve hot and garnish with fresh cilantro.

Notes

  • Red lentils break down naturally as they cook.
  • Stir occasionally to prevent sticking.
  • Add more broth if the soup becomes too thick.
  • Fresh ginger adds the best flavor.
  • Blend fully for a smoother soup.
