Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 6 slices bacon cooked and crumbled
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 medium Yukon Gold potatoes sliced into bite-sized pieces
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups chopped kale
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese optional

Method
 

  1. Brown the Italian sausage in a skillet over medium heat, breaking it into crumbles. Drain any excess grease.
  2. Transfer the cooked sausage to the crockpot.
  3. Add the onion, garlic, potatoes, chicken broth, water, Italian seasoning, crushed red pepper flakes, salt, and black pepper.
  4. Cover and cook on Low for 6 to 7 hours or High for 3 to 4 hours, until the potatoes are fork-tender.
  5. About 30 minutes before serving, stir in the chopped kale, heavy cream, and half of the cooked bacon.
  6. Cover and continue cooking until the kale is tender.
  7. Serve topped with the remaining bacon and Parmesan cheese, if desired.

  • Yukon Gold potatoes hold their shape well during slow cooking.
  • Add the kale near the end so it stays vibrant and tender.
  • Heavy cream creates the richest, smoothest broth.
  • Freshly grated Parmesan adds extra depth of flavor.
  • Taste before serving and adjust the seasoning as needed.
