Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 8-ounce can tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 9-ounce package refrigerated cheese tortellini
  • 2 cups fresh spinach chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Method
 

  1. Brown the Italian sausage in a skillet over medium heat, breaking it into crumbles. Drain any excess grease.
  2. Transfer the cooked sausage to the crockpot.
  3. Add the onion, garlic, chicken broth, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and black pepper.
  4. Cover and cook on Low for 5 to 6 hours or High for 2½ to 3 hours.
  5. About 30 minutes before serving, stir in the tortellini and chopped spinach.
  6. Add the heavy cream and Parmesan cheese, stirring until well combined.
  7. Cover and cook for another 20 to 30 minutes, or until the tortellini is tender.
  8. Garnish with fresh basil or parsley and serve warm.

Notes

  • Browning the sausage first adds extra flavor.
  • Refrigerated tortellini cooks quickly, so add it near the end.
  • Stir gently after adding the tortellini to keep it intact.
  • Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • Adjust the thickness with extra broth if needed.
