Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • ¾ cup low-sodium soy sauce
  • ½ cup brown sugar
  • ¼ cup honey
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions sliced
  • 1 tablespoon sesame seeds for garnish

Method
 

  1. Lightly grease the slow cooker with cooking spray.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. In a bowl, whisk together the soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, and sesame oil.
  4. Pour the sauce evenly over the chicken.
  5. Cover and cook on LOW for 5 to 6 hours or HIGH for 2½ to 3 hours.
  6. Remove the chicken and shred it using two forks.
  7. Whisk together the cornstarch and water until smooth.
  8. Stir the cornstarch slurry into the sauce in the slow cooker.
  9. Cover and cook on HIGH for 10 to 15 minutes until the sauce thickens.
  10. Return the shredded chicken to the slow cooker and toss until fully coated.
  11. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Low-sodium soy sauce helps control the saltiness.
  • Fresh ginger gives the best flavor.
  • Add the cornstarch slurry near the end for a glossy sauce.
  • Shred the chicken while it's still warm.
  • Stir well before serving so the sauce coats every bite.
