Ingredients
  

  • 2 pounds boneless skinless chicken thighs (or breasts)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 tablespoons unsalted butter sliced
  • 6 cloves garlic minced
  • 2 cups chicken broth
  • 1 pound baby potatoes halved
  • 3 large carrots cut into chunks
  • 1 cup frozen peas
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh thyme optional
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water optional, for thickening

Method
 

  1. Season the chicken with Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  2. Place the potatoes and carrots in the bottom of the crockpot.
  3. Lay the seasoned chicken on top of the vegetables.
  4. Scatter the minced garlic over the chicken and add the butter slices.
  5. Pour the chicken broth into the crockpot.
  6. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until the chicken is tender and the potatoes are cooked through.
  7. Stir in the frozen peas during the last 15 minutes of cooking.
  8. If you'd like a thicker broth, whisk together the cornstarch and cold water, stir it into the crockpot, and cook on HIGH for another 15 minutes.
  9. Sprinkle with fresh parsley and thyme before serving.

  • Chicken thighs stay extra juicy in the slow cooker.
  • Baby Yukon Gold potatoes hold their shape best.
  • Add peas near the end so they stay bright green.
  • Taste the broth before serving and adjust the seasoning if needed.
  • Use low-sodium chicken broth to better control the salt level.
