Crockpot Chicken and Creamy Gravy

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 10.5-ounce can cream of chicken soup
  • 1 packet 0.87 ounce chicken gravy mix
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt adjust to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Lightly grease the slow cooker with cooking spray.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. Sprinkle the chicken with garlic powder, onion powder, thyme, parsley, salt, and black pepper.
  4. In a medium bowl, whisk together the cream of chicken soup, chicken broth, and gravy mix until smooth.
  5. Pour the gravy mixture evenly over the chicken.
  6. Dot the top with butter.
  7. Cover and cook on LOW for 5 to 6 hours or HIGH for 2½ to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  8. Remove the chicken and shred it with two forks, or leave it whole if preferred.
  9. Stir the sour cream into the gravy until smooth.
  10. Return the chicken to the slow cooker and stir to coat it in the creamy gravy.
  11. Cook for another 10 to 15 minutes on LOW.
  12. Serve over mashed potatoes, rice, noodles, or biscuits and garnish with fresh parsley.

Notes

  • Full-fat sour cream creates the richest, creamiest gravy.
  • Add the sour cream at the end to prevent curdling.
  • If the gravy becomes too thick, stir in a splash of chicken broth.
  • Chicken thighs can be substituted for extra juicy meat.
  • Taste the gravy before adding extra salt since the gravy mix is already seasoned.
