Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup chopped sun-dried tomatoes oil-drained
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons chopped fresh parsley for garnish

Method

  1. Season the chicken breasts with salt, pepper, Italian seasoning, and paprika.
  2. Place the chicken in the slow cooker.
  3. Add the garlic, chicken broth, heavy cream, Parmesan cheese, and sun-dried tomatoes.
  4. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken is tender and fully cooked.
  5. Mix the cornstarch and water in a small bowl until smooth.
  6. Stir the slurry into the sauce during the last 20 minutes of cooking.
  7. Cook until the sauce thickens.
  8. Spoon the creamy sauce over the chicken.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • Avoid overcooking to keep the chicken juicy.
  • Stir the sauce gently before serving.
  • If the sauce is too thick, add a splash of chicken broth.
  • Taste and adjust seasoning before serving.
