Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1 10.5-ounce can cream of chicken soup
  • 1 8-ounce package cream cheese, softened
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound angel hair pasta cooked
  • Fresh parsley chopped, for garnish

Method

  1. Lightly grease the slow cooker with cooking spray.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. Sprinkle with garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  4. In a bowl, whisk together the cream of chicken soup, softened cream cheese, chicken broth, Parmesan cheese, minced garlic, and butter until mostly smooth.
  5. Pour the sauce evenly over the chicken.
  6. Cover and cook on LOW for 5 to 6 hours or HIGH for 2½ to 3 hours.
  7. Remove the chicken and cut or shred it into bite-sized pieces.
  8. Return the chicken to the slow cooker and stir until coated in the creamy sauce.
  9. Cook for another 10 to 15 minutes on LOW.
  10. Serve the creamy chicken over freshly cooked angel hair pasta.
  11. Garnish with chopped parsley and extra Parmesan if desired.

Notes

  • Full-fat cream cheese creates the creamiest sauce.
  • Freshly grated Parmesan melts better than pre-shredded cheese.
  • Avoid overcooking the chicken to keep it tender.
  • Stir the sauce well before returning the chicken.
  • Thin the sauce with a little extra broth if needed.
