Ingredients
  

  • 2 medium zucchini grated
  • 1 teaspoon salt
  • 1 cup crumbled feta cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ¼ cup all-purpose flour
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Olive oil spray or 2 tablespoons olive oil

Method
 

  1. Grate the zucchini and place it in a colander. Sprinkle with the salt and let it sit for 10 minutes.
  2. Squeeze the zucchini thoroughly using a clean kitchen towel until most of the moisture has been removed.
  3. Transfer the zucchini to a large mixing bowl.
  4. Add the feta cheese, Parmesan cheese, eggs, breadcrumbs, flour, garlic, parsley, dill, oregano, black pepper, and paprika.
  5. Mix everything together until well combined.
  6. Roll the mixture into balls about 1½ inches in diameter and place them on a lined baking tray or plate.
  7. Heat the air fryer to 390°F (200°C) or preheat the oven to 425°F (220°C).
  8. Lightly spray the zucchini balls with olive oil.
  9. Air fry for 12 to 15 minutes, turning halfway through, until golden brown and crispy.
  10. For the oven method, bake for 22 to 25 minutes, turning once halfway through baking.
  11. Serve warm with Greek yogurt, tzatziki, ranch dressing, or your favorite dipping sauce.

Notes

  • Squeeze as much moisture as possible from the zucchini.
  • Freshly grated Parmesan adds the best flavor.
  • Don't overcrowd the air fryer basket.
  • Chill the mixture for 15 minutes if it's too soft.
  • Spray lightly with oil for extra crispiness.
