Ingredients
  

  • 14 ounces 400g extra-firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • 2 cups cooked white rice
  • 1 cup cucumber diced
  • 1 cup shredded carrots
  • 2 green onions sliced
  • 1 teaspoon sesame seeds
  • Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated

Method
 

  1. Press the tofu for 10 minutes and pat dry.
  2. Cut the tofu into bite-sized cubes.
  3. Toss the tofu with cornstarch until evenly coated.
  4. Heat the oil in a large skillet over medium-high heat.
  5. Cook the tofu for 8 to 10 minutes, turning occasionally, until golden and crispy.
  6. In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, sesame oil, garlic, and ginger.
  7. Pour the sauce over the tofu and cook for 1 to 2 minutes until glazed.
  8. Divide the rice among serving bowls.
  9. Top with the crispy tofu, cucumber, and shredded carrots.
  10. Garnish with green onions and sesame seeds.
  11. Serve immediately.
