Ingredients

  • 2 cups cooked chicken breast chopped
  • 6 slices bacon cooked and crumbled
  • ½ cup shredded cheddar cheese
  • ¼ cup red onion finely diced
  • ¼ cup celery finely diced
  • 2 tablespoons chopped fresh chives
  • ½ cup ranch dressing
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • For the Sandwich
  • 4 sandwich rolls or ciabatta rolls
  • 4 lettuce leaves
  • 2 slices tomato halved (optional)

Method
 

  1. Cook the bacon until crispy, then drain on paper towels and crumble into small pieces.
  2. In a large bowl, combine the chopped chicken, bacon, cheddar cheese, red onion, celery, and chives.
  3. Add the ranch dressing, garlic powder, onion powder, salt, and black pepper.
  4. Mix everything together until evenly coated.
  5. Slice the sandwich rolls in half and lightly toast them if desired.
  6. Place lettuce leaves on the bottom half of each roll.
  7. Add tomato slices if using.
  8. Divide the chopped chicken mixture evenly among the rolls.
  9. Top with the remaining bread and serve immediately.
