Ingredients
  

  • For the Chicken
  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Buffalo Sauce
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons melted butter
  • 1 tablespoon honey
  • For Assembly
  • 4 brioche buns
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded lettuce
  • 1 red onion sliced
  • 4 slices provolone or pepper jack cheese optional

Method
 

  1. Preheat the grill to medium-high heat.
  2. Pat the chicken breasts dry and brush with olive oil.
  3. Season both sides with garlic powder, onion powder, paprika, salt, and black pepper.
  4. Place the chicken on the grill and cook for 6 to 7 minutes per side until fully cooked and the internal temperature reaches 165°F (74°C).
  5. While the chicken grills, whisk together the buffalo sauce, melted butter, and honey in a small bowl.
  6. During the last few minutes of cooking, brush the buffalo sauce mixture generously over the chicken.
  7. Remove the chicken from the grill and let it rest for 5 minutes.
  8. Lightly toast the brioche buns on the grill.
  9. Spread ranch dressing on the top and bottom buns.
  10. Layer the grilled buffalo chicken onto each bun.
  11. Top with lettuce, sliced red onion, and cheese if using.
  12. Drizzle with additional buffalo sauce if desired and serve immediately.

Notes

  • Buffalo sauce can burn quickly, so brush it on during the final minutes of grilling.
  • Allow the chicken to rest before slicing to keep it juicy.
  • If the chicken breasts are very thick, pound them slightly for even cooking.
  • Freshly toasted buns help prevent the sandwich from becoming soggy.
