Ingredients
  

  • For the Filling
  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon oregano
  • Salt and black pepper to taste
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • ½ cup Monterey Jack cheese
  • ½ cup diced tomatoes
  • ¼ cup diced green chilies optional
  • 2 tablespoons chopped fresh cilantro
  • For Assembly
  • 6 large flour tortillas
  • 2 tablespoons butter or olive oil for toasting
  • Optional Toppings
  • Sour cream
  • Salsa
  • Guacamole
  • Pico de gallo
  • Jalapeño slices

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook for about 4 minutes until softened. Stir in the garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
  4. Season the beef with chili powder, paprika, cumin, oregano, salt, and pepper. Stir well.
  5. Mix in the cooked rice, diced tomatoes, and green chilies if using. Cook for 2 to 3 minutes until everything is heated through.
  6. Remove from the heat and stir in the cilantro.
  7. Warm the tortillas slightly to make them easier to roll.
  8. Place an even amount of the beef and rice mixture in the center of each tortilla.
  9. Sprinkle with the cheddar and Monterey Jack cheese.
  10. Fold in the sides and roll tightly into burritos.
  11. Heat a clean skillet over medium heat and lightly brush with butter or olive oil.
  12. Toast the burritos seam-side down for 2 to 3 minutes, then flip and cook until both sides are golden and crispy.
  13. Serve warm with your favorite toppings.

Notes

  • Warm tortillas before rolling to prevent cracking.
  • Drain excess grease from the beef for the best texture.
  • Do not overfill the burritos.
  • Freshly shredded cheese melts more smoothly.
  • Toasting adds a crispy exterior and helps seal the burrito.
