Ingredients

  • 6 ears corn husked
  • 12 slices bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • For the BBQ Glaze
  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • For Garnish
  • Fresh parsley chopped

Method

  1. Preheat the grill to medium heat.
  2. Brush the corn lightly with olive oil.
  3. Season the corn with garlic powder, smoked paprika, and black pepper.
  4. Wrap two slices of bacon around each ear of corn, slightly overlapping the bacon as you go.
  5. Secure the ends with toothpicks if necessary.
  6. In a small bowl, whisk together barbecue sauce, honey, brown sugar, and Worcestershire sauce.
  7. Place the bacon-wrapped corn on the grill.
  8. Cook for 20 to 25 minutes, turning frequently until the bacon is crispy and the corn is tender.
  9. During the last 5 minutes of cooking, brush the corn generously with the BBQ glaze.
  10. Continue grilling until the glaze becomes sticky and caramelized.
  11. Remove from the grill and allow to rest for a few minutes.
  12. Sprinkle with fresh parsley before serving.

Notes

  • Thin-cut bacon tends to crisp more easily than thick-cut bacon.
  • Rotate the corn frequently to ensure even cooking and prevent burning.
  • Apply the glaze near the end of cooking because the sugar can burn if added too early.
  • Fresh corn provides the sweetest flavor and best texture.
