Avocado Chicken Salad Wraps

Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 2 ripe avocados diced
  • 1/2 cucumber diced
  • 1/4 red onion finely chopped
  • 1 tablespoon lime juice
  • 2 tablespoons Greek yogurt or mayonnaise
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh cilantro or parsley chopped
  • 4 large flour tortillas
  • Lettuce leaves

Method
 

  1. In a large bowl, combine the cooked chicken, diced avocado, cucumber, and red onion.
  2. Add lime juice, Greek yogurt or mayonnaise, garlic powder, salt, and black pepper.
  3. Gently mix everything together until well combined while keeping some avocado chunks intact.
  4. Stir in fresh cilantro or parsley for extra freshness.
  5. Lay the tortillas flat and place lettuce leaves in the center of each tortilla.
  6. Spoon the avocado chicken salad mixture evenly onto the tortillas.
  7. Fold in the sides and roll tightly into wraps.
  8. Slice the wraps in half and serve immediately.

Notes

  • Use ripe but firm avocados so the wraps hold texture well.
  • Rotisserie chicken works great and saves preparation time.
  • Fresh lime juice helps keep the avocado from browning quickly.
  • Do not overmix the avocado to avoid a mushy filling.
  • Chill the filling slightly before assembling for extra freshness.
  • Use large tortillas for easier rolling and better filling distribution.
  • Add seasoning gradually and taste before serving.
