Season both sides of the chicken with Italian seasoning, garlic powder, paprika, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Sear the chicken for 4 to 5 minutes per side until golden. Remove and set aside.
Melt the butter in the same skillet.
Add the mushrooms and onion, cooking for 5 to 6 minutes until softened and lightly browned.
Stir in the garlic and cook for 30 seconds.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Stir in the heavy cream, Parmesan cheese, Dijon mustard, and Italian seasoning.
Simmer for 3 to 5 minutes until the sauce begins to thicken.
Return the chicken to the skillet and spoon the sauce over the top.
Cover and cook for 8 to 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Garnish with fresh parsley or thyme and serve immediately.
